That's quite interesting. There is a new technology improving the old freeze-dried method which is also an option for food preservation.

SPC Andrew Ross The Mrs, Granny Sandy and Her Mom Great Granny Hazel grew up in the Area where Virginia, Tennessee, Kentucky & North Carolina Meet and it is definitely a Cultural Thing there.

My mom spent hour after hour tending to canning over a hot stove. It was sacrilege to break a mason jar!

I keep a good store of cases of canned Veggies on hand in case the harvest comes up short, otherwise canning is the way to go for me. I buy a lot at yard sales then just buy new lids and bands. I bought 188 for $10 dollars one day!!!!

In my honest opinion, home canned is way better, my mother, my late mother in law, my late grandmother, and my wife put up large quantities of food that way. Better than store bought.
