I don't subscribe to the NYT so I apologize if I am off point.
In the U.S., once you enter the commerce stream... if you offer a service, you offer it to all who want it. If I make wedding cakes, I make them for anyone that wants a wedding cake. On the other hand, if I don't cater weddings, people cannot force me to cater a wedding because they are part of a protected status demographic. If I accept a government position to provide a service, the government, not I, determine who is a valid recipient of my services.
That said, I do not leave my rights at the door completely. When I encounter someone new, I generally ask how they want me to address them. I honestly am not smart enough to figure out all the alternative gender pronouns. My solution... if someone prefers to use some form of an alternative pronoun, my simple solution is to never use a pronoun in referring to them, and always use their name. If that offends them, I let them know I'm not looking for a fight, but clearly they are, so it is best if we part ways.
