The French are masters of making edible meals from the worst ingredients. (They're like the first masters of Soul Food in that regard) French roasting is used to cover up poor quality coffee beans by toasting them excessively. (Sort of like Persians dyed pistachios red to cover up blemishes) Basically then, Starbucks sells bad beans burnt and charges ridiculous prices to con everyone into believing it's "special". Personally, I developed a taste for coffee in the Army, cowboy coffee, thick enough to float a horseshoe. Still a helluva lot better than Starbucks and it was free and plentiful.

I frequently stopped at 7 Eleven for coffee before retiring (I spent a lot of time on the road) A helluva lot better than Starbucks. McDonalds surprised me. I kept hearing that they were serving good coffee but couldn't believe it. (Everything else there is awful.) However, it was good; again, a helluva lot better than the swill at Starbucks. Still, I keep in mind, "De gustibus non est disputandum" (Each to their own)

CDR Terry Boles - Put a washed, crushed eggshell in your grounds. The eggshell absorbs the acids and reduces the bitterness. The more eggshell per cup of coffee the more mellow the brew. Start with 1 shell per 4 cups. Adjust the ratio until you get just the right "complexity."

A couple years ago as I was going to an appointment at Martinsburg, WV VAMC I stopped at a pace class Black Dog Coffee in Shenandoah Junction, WV CPT Jack Durish. They offer 10% discounts for veterans and have a black dog who lounges on bags of coffee much of the time. He is the second black dog who rescued like the first one who died earlier.
I like good strong-black coffee. I was browsing through the bags of coffee beans and noticed they all had roasted dates on them. I talked with the owner who started roasting his own as a hobby. He told me about the rule of 2s for coffee: coffee should be roasted within 2 months of harvesting; it should be ground within 2 weeks of roasting and it should be sipped within 20 seconds of brewing.
I have looked in many stores and coffee shops at coffee bags and I have never seen a roasting date on them.
I buy 4 half-pound bags of coffee from Black Dog each month and ground some every other day or so.

CW5 Charlie Poulton - I didn't drink coffee until after I enlisted and it kept me warn as I was pulling night guard duty every now and then. I can't remember f I drank coffee as an upper classman at West point; but, I know I drank it in Germany and in every unit after that. After drinking mess-hall coffee and office-pot coffee which brewed until it turned solid, I learned to like the taste of good coffee. I tend to have more than two cups a day.

I purchase coffee beans at Trader Joes, but when I'm feeling flush (have a few dollars to spare) I order coffee beans from the Koa Plantation in Hawaii. It's air shipped fresh and I grind just enough for the two cups I drink each morning. Coffee begins to oxidize as soon as it's ground. I make it strong (the way I learned to drink it in the Army) and use low acid beans such as Trader Joe's Wake Up or the Kona coffee (not a blend) so that I don't get too much acid even if I brew it as strong as I like.
