Just like most Chinese would be shocked to see what passes for Chinese food in Chinese restaurants in the USA, it is not surprising that so called at Mexican-American restaurant food is generally far removed from what is common in Mexico SGT John " Mac " McConnell.
My wife was born in Cuba, she escaped to Mexico at age 14. She stayed with a USA missionary couple and was surprised when she saw tortillas being dried on a clothes like clothes. She learned to eat what was prepared for her which was so much different that what she ate at her parents farm in Cuba.
I am not surprised at all to learn that Ignacio 'Nacho" Anaya developed what passes for Nachos on the spur of the moment as he wanted to serve the patrons of his Victory Club restaurant during the hard times of WWII.
